i’m a cake person.

more precisely, a cake and ice cream person.  seriously, it just doesn’t get much better for me.  cookies, nah.  pie, sure, most days.  but moist, flavorful, not-t00-sweet frosted cake?  YES, please!

of course, it’s always fun for it to look pretty at the same time that it tastes great.  everyone was raving about Sister’s birthday cake so i thought i should share my secrets and how easy this cute sprinkle-number cake really is!  i have absolutely NO cake decorating training and if i can do this, you can too.

Start with a regular box cake (i used chocolate for this cake) and here’s the secret to a fool-proof amazingly delicious cake…….wait for it………  wait for it….

..1/2 cup of sour cream!  do it.  add it to your next box cake and you will be thanking me for all of time.

Bake in two round pans according to box directions.  Cool completely.  Place first round on the bottom and then spread with a decent layer of the MOST amazing buttercream frosting ever!  (Side note:  use heavy cream instead of milk and it makes a world of difference in the amazing taste and texture–remember…..not too sweet.)

To decorate:  add the second cake round and then crumb coat the entire cake with a very light layer of frosting.  i refrigerate the cake for a little while after this step, but i don’t know if it’s really necessary.

Next, cut out a pattern from cardboard for your number, letter, or shape (ooh, a heart would be so cute for valentine’s day!) and place in the center of the cake.

Start sprinkling the rest of the top of the cake with a heavy layer of sprinkles.

Pipe the edge with whatever colored frosting you choose using a piping tip and bag (or plastic baggie).   Chill and serve!  It looks much fancier than it really is.

…and most importantly, tastes amazing!
